Thai Coconut Soup – I am exotic
Ingredients
- Soup Base
- 2 young thai fresh coconuts
- 3 ts tamari
- 1 small chili pepper
- 1 Ts olive oil
- 1 Ts curry
- Lemon grass
- 1/2 avocado
Open the coconut and pour the coconut water in the blender.
Cut the coconut in half and remove the flesh from the coconut, put it in the blender as well.
Add the rest of the ingredients : 1 tamari, the chili, 1 Ts olive oil and 1 Ts curry, and blend.
Garnish
- 1 tomato
- 1 bunch of coriander/ cilantro
- few leaves of mint
- 1/2 avocado
- 1/2 portobello mushroom
Cut the portobello, the avocado and the tomato in little squares.
Pour the soup base in a bowl on the garnish and serve.
If you wish, you can warm the soup base a bit on the stove.

I would love to try this soup but we can’T buy young thai coconut in my region. There is a philipinno boutique that sell frozen young coconut flesh. Can I use that? My problem is that I don’t get the coco water. Can I just add water? I don’t want to buy canned coconut water.

It looks delicious.
In our area there are no fresh coconuts, what can I replace them with to maintain a raw recipe?
I also have other question.
We are opening Heath and Wellness Centre in Christina Lake , British Columbia. Is anybody interested in having a workshop about raw food here? The cost needs to be reasonable as we are starting, but a person can stay here for a week in the summer for an exchange.We would love to share a raw food concept with others for their health benefits. If you have a book for sale, we can acomodate it and keep selling them here.

You could soak dried coconut flakes in water for a few hours (about 2 hours is enough) and then use this as the coconut meat. It will be less creamy than the actual fresh meat from the young thai coconut but it will still be amazingly delicious!
Congratulations on your health and wellness center! I think it’s a great idea to introduce raw foods in such a place! I would do it if I were closer to you

HI Josee! Yes you can use the frozen coconut meat with water, once blended, that will make coconut milk!
