Mediterranean Salad Wrap – I Am Content
Ingredients
- Courgette/zucchini
- Carrot
- 4/5 avocados
- red onion
- 2 sweet peppers
- 5/6 tomatoes
- 1 lemon
- olive oil
- red hot chilli pepper
- romain lettuce
Know How Now
Guacamole: Mash the avocados and add the juice of 1/2 lemon (or lime), 3 Ts olive oil, chopped red chili and chopped a quarter (1/4) of an onion.
Tomato salsa: chop the tomatoes and the sweet peppers. Pour the juice of the other half of the lemon (or lime) and add 3 Ts Olive oil. Add 1/4 of onion, chopped in tiny bits.
With a peeler, make carrot and courgette tagliatelles.
In a leaf of romain lettuce, put a bit of guacamole, tomatoe salsa, topped with some carrot and courgette tagliatelles. Wrap the whole thing in the salad leaf and it’s ready to eat!
