Pepper Sandwich – I Am Beachy
Ingredients

- 1 Long bell pepper
- 1/2 avocado
- 1/2 small tomato
- 1 celery stick
- Gherkins or capers
- Optional: fresh herbs
- 1 ts of pesto
- cashew cream
Know How Now:
Take a long bell pepper and cut the head, then cut it on one side length wise.
Remove the center and the seeds.
Take a stick of celery and cut it in half length wise.
Stick it in the pepper.
Cut half of the avocado, half the tomato and the gherkins and put them evenly in the pepper.
With a tea spoon, add a bit of cashew cream (cashews, nutritional yeast, salt, water and touch of olive oil) and pesto.
If you have, you can add some coriander, parsley or dill inside the pepper as well.
It’s ready to serve and so easy to eat!
