Raw Stuffed Mushrooms – I’m easy going!

Ingredients
4 Portobello Mushrooms
marinara:
olive oil and tamari
Stuffing:
150gr soaked Pumpkin seeds
1 carrot
1 avocado
Raw Basil Pesto (2-3 tbsp)
Topped with:
dried thyme

Know How Now
Wash the mushrooms and remove the stem and marinate them in olive oil and tamari for 4 hours or more.
Then make the stuffing: put the soaked pumpkin seeds (soaked for 2 hours minimum) with the pesto, the carrot and the avocado in the food processor and process until well mxied. then stuff the mushrooms and top with some dry thyme.
Put in the dehydrator for as long as you want: from 2 hours to 1 full day!
Before serving, prepare your parmesan and sprinkle on top! SErve with salad! De-Li-Cious!
