Raw Pumpkin Pudding – Chef Be Live Inspired

Ingredients
1/2 small pumpkin
1/2 cup of soaked cashews
1 ts cinnamon
1/2 ts Nutmeg
2 tbsp agave syrup
2 tbsp maple syrup
Optional (Audrey’s touch :-) ): 1 ts Lucuma or Mesquite powder!

Know How Now

Peel the Pumpkin, and stick all the ingredients in your blender!
Raw pumpkin is quite hard so I think blendtec or vitamix would be best for this.
I find you have to add maybe 1/4th of a cup of water to have the blender going.
If you can’t find pumpkin anymore, which is rather hard outside of halloween, just take any other squash. I’ve tried it with butternut squash as well and it was wonderful!
You can also make a crust and pour the pudding in it! That would make a creamy pumpkin pie!

For the ones who are “almost raw”, you can boil the pumpkin and blend it with the same ingredients. This may actually help as well if you don’t have a high speed blender, but then it’s not 100% raw anymore…. :-(
