Raw Sweet Crepe Recipe – I Am Number 1
Directions
Blend the brazil nuts into powder in a food processor, then add the bananas, olive oil, vanilla, nutmeg and salt. Keep processing until it forms a dough, pouring water gradually. Spread the mixture on a teflex sheet with a spatula. You can make some rounded crepes, or make thin squares. I personally prefer to make rounded crepes. Dehydrate at 46deg for 8-10 hours, flipping the crepes half way through. The crepes are ready when they are dry enough but not too dry so that you can bend then without breaking them.
Tips and Thoughts
Matt and I love those crepes! We are specially keen to make some during autumn, in the transition between summer and winter because the sweetness of the crepe is comforting but we love to fill the crepes with fruit and ice-cream. It can be banana ice-cream or a raw/dairy free ice cream you can find in a health food store. We are making our own ice-cream, most of the time out of bananas or coconut. In Joy! xx
